Bok Choy is a type of Chinese cabbage and is one of my favorite vegetables. It contains vitamin A, C, and K as well as calcium, magnesium, potassium, manganese, folate, iron and more! If you’re tired of broccoli, string beans and asparagus give bok choy a try! In this video I made a quick side of bok choy to pair with my @thechickenpound  chicken! Prep Time 1 minute, Cook Time 5 minutes. You’ll need onions, garlic and olive oil to recreate this. (My secret ingredient half way through is edible argan oil from Morocco 😋) ______________________________________________________________

RECIPE: Zucchini Fries

Zucchini Fries

Zucchini Fries Coated with Ground Almonds

I recently visited a local farm and picked up a few things; zucchini was one of those things. Peach salsa was another thing (omg) I will have to try recreating that! Anyhoo… today I was craving french fries and I wanted a treat so I decided to make zucchini fries! Below is the recipe I came up with 🙂 Please enjoy!!

You will need:
1 or 2 zucchini(s)
1/2 cup egg whites (varies depending on amount of zucchini) 
1 cup almonds or any nut(s) you choose
food processor
olive oil spray
cookie sheet
 
Add nuts to food processor and grind until they look like bread crumbs.
Cut zucchini into french fry sized pieces 🙂
Place ground nuts in one container and egg whites in another
Preheat oven to 425
Lightly spray cookie sheet with olive oil
Begin dipping zucchini in egg whites then in ground nuts and try to coat as best as possible. (this can be a little tricky)
Lay fries on cookie sheet; sprinkle additional ground nuts on top if desired.
Bake for 20 min or until the fries look toasted 🙂
