Protein Pancakes

I received this recipe from my coach and it is easily one of my favorites. The variations are almost endless as you can add different fruit within the mixture or on top, you can also add protein powder for extra flavor and protein. I choose to not add any sweetener such as honey or stevia but that is another option for you. You can also use flavored oatmeal just be mindful of the sugar and artificial flavors/sweeteners it may include. Lastly, you can cook it different ways, like in a waffle iron or one huge pancake if you are short on time. 🙂 Please enjoy!!

You will need:
1/3 cup oatmeal (uncooked unsweetened instant)
1 egg
3 egg whites
Dash of cinnamon and nutmeg (optional)
 
Mix all ingredients until well blended.
Lightly spray pan or waffle iron with olive oil and heat.
For pancakes I filled a mold halfway and cooked over low flame until solid enough to flip over.
For waffles I poured entire mixture onto waffle iron spreading evenly. Waffle will rise as it cooks.
 
The plantains were sliced and cooked separately in olive oil over a medium flame. 🙂
 
This recipe makes 3 average size pancakes or 1 waffle.
