Bok Choy is a type of Chinese cabbage and is one of my favorite vegetables. It contains vitamin A, C, and K as well as calcium, magnesium, potassium, manganese, folate, iron and more! If you’re tired of broccoli, string beans and asparagus give bok choy a try! In this video I made a quick side of bok choy to pair with my @thechickenpound  chicken! Prep Time 1 minute, Cook Time 5 minutes. You’ll need onions, garlic and olive oil to recreate this. (My secret ingredient half way through is edible argan oil from Morocco 😋) ______________________________________________________________

RECIPE: Zucchini Boats

Here is a quick and simple but super yummy idea for lunch or dinner!

What You’ll Need:

  • Several Zucchini
  • Pre-Cooked Chicken (I used leftover rotisserie chicken)
  • Red Peppers
  • Green Peppers
  • Onions
  • Tomatoes
  • Fresh Mozzarella
  • 2-3 TB Coconut Oil or Olive Oil

 

What to Do:

  1. Cut out chunks of the zucchini to make them boat-like. Save the guts for later.
  2. Chop red peppers, green peppers, onions and tomatoes.
  3. Sautée chopped veggies in pan, with oil (including left over zucchini guts) for several minutes until soft.
  4. Arrange your boats on a cookie sheet and begin to put a layer of chicken in each boat.
  5. Top with your sautéed veggies and fresh mozzarella.
  6. Bake for 20-25 min uncovered @ 350 degrees.
  7. Enjoy!
